Noodle rings continue in popularity with simple folk in small towns across the states, who happily serve simple, delicious, and hearty foods. These recipes fit the bill.

The Chinese are known to have been eating a food that was "noodle-like" as early as 3000 BC, and pasta can be traced back to at least the fourth century BC, according to the National Pasta Association. It is not known when noodle rings first appeared, but they became a common, small-town dish with family recipes passed down for generations. Noodle rings are still made to this day providing a delightful, filliing meal and the dish is celebrated on National Noodle Ring Day every December 11th.

Here is a recipe for homemade noodles, plus three noodle ring dishes that are easy to prepare and offer a twist on traditional pasta fare.

Homemade Noodles

Ingredients

  • 1 egg.
  • ½ tsp. Salt
  • Flour

Directions

  1. Crack egg into a large bowl and beat slightly.
  2. Add salt and stir in just enough flour to make a stiff dough.
  3. Remove dough to lightly floured board and knead until smooth.
  4. Roll out as thin as possible, like paper, cover with a towel and let rest for 30 minutes.
  5. Cut into noodles or other shapes, and place on baking sheet lined with wax paper to dry. Pat top with paper towel and let set out for about 1 hour until noodles stiffen some.
  6. To cook, place in boiling water until desired firmness has been reached.

Noodle Ring

Ingredients

  • 1 pound noodles
  • 3 eggs, well beaten
  • 1 cup milk
  • 2 Tbsp catchup
  • 1 cup grated Cheddar cheese
  • ½ Tbsp Worcestershire sauce
  • Salt and Pepper, to taste

Directions

  1. Cook noodles and drain.
  2. Add well beaten eggs to remaining ingredients, milk, catchup cheese, Worcestershire sauce, and salt and paper to taste. Stir until well mixed.
  3. Add to noodles and stir to distribute sauce, then pour into a buttered ring mold.
  4. Place ring mold in a pan of hot water and bake in oven at 350 degrees for 45 minutes.
  5. Carefully unmold the ring onto a serving dish and fill the center with desired dish.

Noodle Ring with Olives

Ingredients

  • 1 pound noodles
  • 1 cup ripe pitted olives
  • 4 eggs, separated
  • 8 oz. carton cottage cheese
  • 8 oz. carton sour cream
  • 3 Tbsp minced onion
  • 1 Tbsp Worcestershire sauce
  • white pepper to taste
  • 1 Tbsp. Flour in a little milk
  • 1 tsp, garlic salt
  • Paprika

Directions

  1. Beat egg yolks and combine with with all ingredients except pasta, egg whites, and paprika, and mix well.
  2. Add to noodles and stir to incorporate.
  3. Whip egg whites and fold into pasta mixture.
  4. Turn into a well-buttered ring mold, sprinkle with paprika, and place in a pan of hot water.
  5. Bake at 350 degrees for 35 minutes

German Noodle Ring

Ingredients

  • 1 lb. Noodles
  • 3 TBsp butter
  • 3 Tbsp flour
  • 1 ½ cups milk
  • 2 eggs, well beaten
  • ¼ lb. Cheese, such as Swiss or Cheddar
  • ½ tsp. salt
  • ½ tsp. paprika

Directions

  1. Cook and drain noodles and put into a well-greased ring mold.
  2. In a sauce pan, melt the butter, add the flour and blend. Stir in milk and continue cooking until the mixture thickens.
  3. Add cheese cut in small pieces and seasonings. Continue cooking until cheese melts.
  4. Reserve ½ of cheese mixture for later use. Add the well-beaten eggs to remaining cheese sauce and mix well.
  5. Pour sauce over noodles in ring mold, place in pan of hot water, and bake for 45 minutes at 350 degrees.
  6. Unmold onto a large platter. Pour reserved cheese sauce over noodles and fill center with desired vegetables; carrots, broccoli, asparagus, zucchini, etc.

Serving Suggestions: Serve with Creamed chicken, creamed seafood, vegetables in cheese sauce, chicken cacciatore, beef stroganoff, chipped beef, etc.
